On the top floor of Heure Bleue Palais, Le SAMA takes the roof between the medina terraces and the ramparts of Bab Marrakech — in Darija, "sama" means sky. The cooking crosses Moroccan and Mediterranean influences: burrata with vegetable zaalouk, melon gazpacho with smoked duck, roasted peach with verbena, with argan oil and cumin as signatures, and a daily board following the market. Around the pool, small lounges stretch lunch out in the open air, the medina spread out below.
